Sweet & Sour Chicken Stir Fry for Two August 25, 2007

Ingredients
1-2 lbs chicken breasts cut in strips
2 green peppers
2 red peppers
1 can chunk pineapple
1 cup orange juice
2 TBSP soy sauce
1/2 cup brown sugar
1 TBSP cornstarch
1 small bag snow peas
1 tsp ground ginger
Rice or Chinese noodles

Directions
Saute chicken and peppers until tender. Add peas and simmer. In a separate pan, blend together soy sauce, orange juice, ginger and brown sugar. Heat until sauce comes to a boil. Add cornstarch mixed with a little water. Blend until thickened. Add sauce to chicken mixture. Serve over/with rice or Chinese noodles.

Sauteed Scallops with Lemon Sauce August 25, 2007

Sea scallops are usually larger and have more flavor than smaller Bay scallops. Ingredients

2 lb. scallops
2 Tbs. olive oil
1 Tbs. cornstarch
1/4 C. dry white wine
Juice of 2 lemons
1 Tbs. lemon zest
1/2 tsp. dried dill
1/4 C. crisp cooked bacon, crumbled
1/4 C. fresh parsley, chopped

Directions

1. Sauté scallops in olive oil for 5 – 10 minutes.

2. Combine cornstarch, wine and lemon juice and zest and stir until cornstarch is nearly dissolved.

3. Add this mixture along with dill and bacon to scallops and stir until mixture thickens.

4. Serve immediately.

JUSTIN TIMBERLAKE PECAN PIE RECIPE August 24, 2007

Justin Timberlake’s Pecan Pie

3/4 cup sugar
1/8 teaspoon salt
6 tablespoons flour
3 tablespoons butter, melted
1 teaspoon vanilla
1 cup corn syrup (light or dark)
1 cup coarsely chopped pecans
1 pie shell, baked and cooled

  1. Preheat the oven to 375°F.
  2. Combine the sugar, flour, salt, eggs, and butter in a bowl. Whisk ingredients until light in color.
  3. Add corn syrup, vanilla, and chopped pecans. Stir with a rubber spatula until combined.
  4. Pour into a baked and cooled pie crust and bake in oven for 30 minutes.
  5. Cool, slice and serve.
 

Olive Garden Chicken Marsala Recipe..Sample from Copy Cat CookBook August 20, 2007

I just finished cooking this one, it was excellent. I didn’t add or delete any other ingredients and it came out fine!


Ingredients:

4 Chicken half-breasts — pound 1/4″ thick — skinned & Deboned
1/4 cup Wondra flour
1/2 teaspoon Salt
pepper to taste
1/2 teaspoon Oregano
4 tablespoons Oil
4 tablespoons Butter/margarine
1 cup Fresh mushroons — sliced
1/2 cup Marsala wine

Directions:

Combine flour, salt, pepper and oregano and blend well. Heat the oil and butter in a skillet until bubbling lightly. Dredge the chicken in the flour and shake off the excess. Cook the chicken on medium heat for about 2 minutes on the first side, until lightly brown. As you turn the breasts to the second side to cook, add the mushrooms around the chicken pieces. Cook about 2 more minutes, until lightly browned on the second side. Stir the mushrooms. When the second side is lightly browned, add the wine around the pieces, cover the pan and simmer for about 10 minutes.
